Here at Cobblestone Pizzeria, we pride ourselves on crafting authentic Neapolitan pizza—tracing its origins back to 18th-century Naples, Italy. What began as a humble flatbread enjoyed by the working class evolved into the iconic dish we know and love today. Topped with canned San Marzano tomatoes grown in the nutrient-rich volcanic soils of Naples, these tomatoes offer a sweet, balanced flavour with low acidity—perfect for creating that quality taste. Finished with fresh mozzarella, basil leaves and a drizzle of olive oil. This timeless combination gave rise to the classic Margherita, a true celebration of simplicity, heritage, and flavour.
It all begins with the dough. At Cobblestone, we use simple, high-quality ingredients, crafted with care and precision. From dough hydration to a fermentation process that spans anywhere between 6 to 72 hours, every step is perfectly calculated to develop flavour depth and texture. Each dough ball is then hand-rolled and stretched to ensure a final result that’s light, airy, and blistered to perfection—for that signature puffy edge crust.
